Simple Salmon

Here's a quick healthy Paleo friendly recipe for salmon. Get the family involved in the kitchen, no better place to catch up on the day and love each other. Food makes people happy.

You can sub any fish or veggies you like, grab your reusable tote bag and get to the market.

Simple Salmon

2 8oz. Salmon Filets
1 Yellow Zucchini
1 Green Zucchini
10 Baby Portabello Mushrooms
8 Roma Tomatoes
1/2 Red Onion
4 Garlic Cloves
1 Small Head Broccoli
5 oz. Olive Oil
Salt and Pepper
Crushed Red Pepper Flakes
Jim Baldridge Seasoning

Preheat oven to 400 degrees.

Cut up veggies into large (2-3 in) uniform pieces, cut tomatoes in half length wise and mince garlic (toss out those messy garlic mincers and do it the old fashion way)

Place everything on a large rimmed baking sheet and mix with olive oil, salt, pepper, crushed flakes. (use your hands, the foods gotta have love) Spread out evenly on sheet.

Season salmon with Big Jim or your favorite seasoning and place on top of veggies. Toss it in the oven for 20-25 mins or until fish just pulls apart. Uncork the wine while it cooks and get ready for Eat Time. Serves 4 (or less if you're hungry)
